Spaetzle time!


The cold weather and the fact that my life is finally settling down, meant that it was time to whip out the Spaetzlehoebel (noodle maker) on Saturday and make some cheese spaetzle (German mac n’ cheese.) The end result was pretty tasty and best of all, my tiny kitchen survived the endeavor!



In other exciting cheese spaetzle news, I am heading to a Colognian restaurant on Monday to celebrate Rosenmontag (German Mardi Gras.) The restaurant serves cheese spaetzle so I will see if The Schlecker Family recipe has a challenger on the Lower East Side of New York City.

Yup, Loreley...that's the one. Is it good? Please don't tell me it sucks, I'll be majorly bummed!

Here's something you would appreciate...I made the spaetzle with cheese from the Kollowitzplatz market!

Please share your spaetzle recipe! As long as there are no potatoes in it, I think it would be delicious. I know I could just Google a recipe, but the Erin-approved version would be much appreciated.

all i ever "ate" at loreley was alcohol-based...oh, and the occasional pretzel. so sorry, i can't comment on the food. although once i had an amazing birthday cake there, shaped and decorated like a can of leinenkugels beer, but i made it myself and brought it inside and begged them to let me serve it to my friends without charging me. they were not happy about it, but then i promised that my friends were all binge drinkers and that made it better...somehow...

Spaetzle is potato-free (though is like gnocchi in some ways.) I'll post a recipe soon!

I had the best Kaese Spaetzle the other day--it had little bits of Sauerkraut in it. I know it sounds gross, but it was delicious! Try it. (It helps if the Sauerkraut is on the sweeter side)

oh my gosh, that just reminds me of the warm schafskaese sandwiches you can buy at festivals...they have sauerkraut in them too! I'm going to recreate that this weekend!
